Cheesy Broccoli Casserole Recipe

- 4 cups chopped broccoli
- 10 ounce can of cream of chicken soup
- 1 cup mayonnaise
- ¾ cup of butter melted
- 2 eggs
- ½ medium yellow onion finely chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 ½ cups sharp cheddar cheese shredded
- ½ sleeve of Ritz Crackers crushed
Preheat oven to 350 degrees.
Chop broccoli into bite size pieces and add to a medium pot or steaming basket on the stove and steam for five minutes or until tender.
Remove broccoli from the stove and drain.
In a large mixing bowl, add broccoli, cream of chicken soup, mayonnaise, butter, eggs, onion, salt and pepper. Mix well.
Add 3/4 cup of cheese to the broccoli mixture and mix until combined.
Grease a 9x13-inch casserole dish with nonstick cooking spray.
Pour entire contents into casserole dish and top with remaining cheese and crushed Ritz Crackers.
Bake for 40 minutes or until the cheese is melted and top is golden.
