Once you have fresh broccoli florets cut and ready, add them to a medium-sized pot or use your steamer basket on the stove, cooking for about five minutes until the broccoli is fork-tender.

When the broccoli is ready, pull it off the heat and drain it well. You’ll then grab a large bowl and add the broccoli, cream of chicken soup, mayonnaise, eggs, butter, onion, and salt and pepper, mixing well to combine.

Ingredients
  

  • 4 cups chopped broccoli
  • 10 ounce can of cream of chicken soup
  • 1 cup mayonnaise
  • ¾ cup of butter melted
  • 2 eggs
  • ½ medium yellow onion finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ½ cups sharp cheddar cheese shredded
  • ½ sleeve of Ritz Crackers crushed

Instructions
 

  • Preheat oven to 350 degrees.
  • Chop broccoli into bite size pieces and add to a medium pot or steaming basket on the stove and steam for five minutes or until tender.
  • Remove broccoli from the stove and drain.
  • In a large mixing bowl, add broccoli, cream of chicken soup, mayonnaise, butter, eggs, onion, salt and pepper. Mix well.
  • Add 3/4 cup of cheese to the broccoli mixture and mix until combined.
  • Grease a 9×13-inch casserole dish with nonstick cooking spray.
  • Pour entire contents into casserole dish and top with remaining cheese and crushed Ritz Crackers.
  • Bake for 40 minutes or until the cheese is melted and top is golden.
